This is my setup, compared to most here it's kinda fugly, but I love it and it really does the job for me.

Nobody uses a projector? I have an Optoma hd151x but you can go with a Benq W1070 too for about 700 euros and get a very big screen. Perhaps a curved screen would give the same result (probably beter) than multiple screens. And your wife would love it for home cinema. If you have a small room think about a short throw projector. You can have a 2 meter base image with the projector at 50cm of the wall.

Welcome to the ultrawide world This is no Triple-screen, but one 34" 21:9 ratio screen with 3440x1440 resolution is already a big baby to play with
And it is! It's a real Sparco Pro 2000 that I bought as second hand for almost nothing (70€ when a new one is more than 400€). I can play hours in it. I made a 5h non-stop session for this competition : http://game.raceroom.com/competitions/548/leaderboard .. it was flawless
The rig has evolved a bit over the last year or so. Upgraded to the CSW V2, got the inversion kit for my pedals, added some black out panels along the top of the monitors, and got a Samsung tablet running DashMeterPro. And here's a video of it in action.
